Perpetual spinach is a variety of chard that is not truly perpetual or spinach, but is a highly productive cut and come again leafy vegetable prized for its bolt resistance and continuous harvesting. It features large, smooth, dark green leaves with white midribs and can be used raw in salads or cooked in various dishes, tasting somewhat like asparagus when steamed. It grows best in full sun to partial shade with consistent moisture, and while it can last for several years, it's often replaced or allowed to go to seed after a second year.
