This deliciously sweet variety of corn will produce two or more heads per stalk. Plant seedlings about 20cm apart in rows with 30cm between, in blocks. Corn is pollinated by the wind, so the more plants you have close together, the bigger your pollinated crop will be. They can be hand pollinated to by shaking the top pollen head over the silks of the below forming corn cobs. Gaps are created on the cobs when pollination isn’t thorough enough. To check if your cobs are ready for picking, the silks or tassels need to be fully brown/ black. Gently peel back a little husk and pierce a kernel with your fingernail. If the juice runs clear, leave them to mature longer. If it is creamy/ white, they are ready to go. Excess corn can be blanched and frozen either on the cob or separated.
