The Carolina Reaper is an exceptionally hot chilli developed by breeder Ed Currie in South Carolina, USA. Its distinctive fruits ripen from green to fiery red and have a wrinkled appearance, often finishing with the characteristic pointed ‘tail’ for which the variety is well known.
The Carolina Reaper was officially recognised by Guinness World Records as the World’s Hottest Chilli in 2013, taking the title from the Trinidad Scorpion ‘Butch T’. With an average heat of approximately 1.64 million Scoville Heat Units (SHU), and individual fruits recorded at up to 2.2 million SHU, it remained the Guinness World Record holder until being surpassed by Pepper X in 2023.
Despite its extreme heat, the Carolina Reaper is also noted for its fruity, sweet flavour. This is a chilli for the serious heat enthusiast and the fruit should be handled with considerable care. Gloves are recommended when harvesting and preparing the chillies, and contact with the eyes and skin should be avoided.
